8-10 medium peaches, skin removed. Chop the peaches into chunks; discard pits. Pulse in food processor until it reaches the consistency of a chunky puree. Pour the puree into a bowl and add the lemon juice; stir well. Gradually add the pectin, one tablespoon at a time, using a whisk. If using right away, refrigerate immediately. If not, store in freezer.
